Black Beans & Rice

1 C black turtle beans
1 C (raw) brown rice
28oz can whole stewed tomatoes
1 onion + garlic
1 can chopped green chilis
1/4 C red wine
1 Tbl chili powder
2 tsp cumin
1 tsp salt
Soak black beans 4 hours or overnight.
Cook black beans at a slight boil for 1.5 hours or in pressure cooker for 20 mins.
Cook rice in rice maker for 45 minutes
Saute garlic & one large chopped onion, add chilis.
Cut up tomatoes as you add them along with red wine,
Add chili powder, cumin, salt, pepper
Add cooked rice & beans to sauce, stir, then transfer to a casserole dish
Cook 30 min at 350. Top with grated cheese

Variations:
Use canned black beans.
Add an ear of corn or a chopped green pepper.
Use chicken or vegetable broth when cooking the rice instead of water.
Use tomatoes w/ basil.
