Chicken Soup - PWS

Ingredients:
1/2 whole chicken or chicken breasts with skin
1 onion diced
3 stalks celery diced
4 carrots diced
2 tsp salt
2 bay leaves

Prep:
Put all ingredients in a big pot with water to cover. Cook 1.5 hours.
Remove chicken from soup. Discard skin and bones, return meat to soup.

I buy a whole chicken and cut it down the middle, then freeze the unused half for another time.
