Classic Hummus

2 C cooked chick peas
(Soak 1C chick peas overnight in warm water. Drain & rinse beans, simmer covered for 4-8 hours)

1/2 cup tahini

1 large lemon
2 cloves garlic
1 tsp kosher salt
10 cranks freshly ground black pepper
1/2 tsp. ground cumin
dash cayenne pepper

2 Tbl olive oil
2 Tbl water

Combine all ingredients in a food processor until smooth.
