Thai-style Green Curry Chicken
Mix in a bowl:
- 2 large garlic cloves, minced
- 1 TBL galanga power or 1 TBL fresh ginger or galanga, minced
- 2 stalks fresh lemongrass, white part only, minced or 1 tsp lemongrass powder
- 1-2 TBL Thai green curry paste to taste
Add to bowl:
- 2 large boneless skinless chicken breasts, cut into 2-inch pieces
... mix well, marinate for 10-20 minutes in the refrigerator.
Heat:
... in a dutch oven pan, then saute chicken for 5 minutes
Add and bring to boil:
- 1 can coconut milk
- 1/8 C lime juice
- 1 TBL tamari
- 1.5 lb sweet potatoes, peeled and chopped into 1-inch pieces
Simmer covered for 25-30 minutes until the chicken is cooked through and the sweet potatoes are firm-tender.
During the last 5 minutes of cooking add:
- 1 C small tomato wedges
- 1/2 C thinly slice red onion
- 1/4 C chopped fresh cilantro
- 1/4 C chopped fresh mint
- 1/4 C chopped fresh basil
