Kale Salad

  1 bunch curly-leafed kake, stemmed and finely chopped
  2 TBL olive oil
  1 tsp salt
1/2 lemon juiced
1/2 C minced red onion
1/4 C finely chopped cucumber
  1. Place chopped kale in large bowl, drizzle with olive oil and salt

  2. Massage kale for 5-10 minutes until fibers of the kale break down

  3. Toss with lemon juice, red onion and cucumber
