Vegetarian Lasagna
Ingredients
- eggplant - 2 medium
- spinach - 1 C
- eggs - 2
- ricotta cheese - 2 C
- shredded mozzarella cheese - 1 lb
- Batch of Italian Tomato Sauce
Preparation
- Peel, then slice eggplant 1/2" thick.
Dip into flour then beaten eggs then bread crumbs
Fry in olive oil until tender and brown (easily pierced with fork). Drain and proceed.
- Mix 2C ricotta cheese + 2 eggs + salt + pepper + spinach
- Assemble lasagna in 13x9" baking dish:
- layer of sauce
- layer of noodles
- layer of eggplant + sauce
- layer of ricotta
- layer of mozzarella
- repeat noodles, eggplant + sauce, ricotta, mozzarella
- Bake 45 minutes at 375
Additional: flour, bread crumbs, eggs
